When I went over, she let me make the first batch.
Here is what you will need:
3 C plus 3 T hot tap water
1.5 T yeast
3/4 C brown sugar
1 T salt
1/3 C canola oil
4 C Wheat Flour
5 C white flour
3 T flax meal/10 grain mix (this is a mix of ground flax meal and 10 grain blend from the bulk section at WinCo. The ratio is: 1/3 flax to 2/3 10-grain)
directions:
(note: this was made in a regular sized kitchen aid mixer, nothin fancy)
put your hot water into the mixing bowl. sprinkle the yeast over the water, so it doesn't clump. then add your brown sugar and salt. then you are going to let it sit until it looks nice and foamy.
once it's foamy, then add the oil, wheat and white flours and flax/10-grain. put your hook attachment on and start mixing on the first speed. once it really starts mixing it all together, you will use a spatula to keep the dough from coming up over the top of the hook (this is because the kitchen aid is slightly too small for the mix, but it works just fine). once it looks well blended, dump the dough out onto your counter. (if you are Shalise, your dough will be such a perfect consistency that it won't even be sticky at all and you won't have to flour your counter top either. that didn't happen for me-i may have needed a little more flour. however, i just added some in as i kneaded. so, now get kneading for a few minutes. shape it into a large, long-ish blob. then cut it into 3 equal portions. take each individual portion and knead it a few more minutes and then shape into a long tube, approximately the length of your bread pan.
now you should have all 3 loaves into your greased bread pans. here is the part that i LOVED! place all 3 pans in the oven (the oven is NOT on at this point), then boil a bowl of water in the microwave and place it into the oven with your pans. this will help the dough to rise as well as keep it moist. ****i loved this so much because i have the most trouble with the rising part**** it worked beautifully!!! it took almost an hour. make sure it doesn't over rise. rise it til the dough is about level with the top of the pan.
now take your pans out of the oven and preheat to 350 degrees. (*Shalise has a convection oven and cooks hers at 325 degrees). bake the bread for 30 minutes. ****i left the bowl of water in the oven while i baked my bread****
Anyway, that's how it was done. I have never been so happy with a bread recipe. I loved how it only took one rising. It cut out so much time, which honestly is why I don't attempt to make bread very often. This was so, so fast and easy. Shalise said you can come over and see how it's done if you want. So, if you're interested give her a call. She makes 18 loaves at a time (lucky girl has double ovens!)
Hope it works for you! Oh yeah, it was delicious too!
***here's something else interesting: when you guy generic brown sugar at winco the ingredients say: sugar, ?inverted? sugar and molasses. The C&H brand ingredients say: brown sugar. check out this link: real brown sugar
very intesting...
